Aling Lucing's Sisig is the roadside eatery at the old railway crossing on Glaciano Valdez Street, Angeles City, where the late Lucia “Aling Lucing” Cunanan turned a peasant dish of chopped pig's head into the sizzling, calamansi-sharp, onion-flecked plate the whole country now calls sisig. It is the reason Angeles calls itself the Sisig Capital of the Philippines, and it is still there, still open-air, still cooking over charcoal.
Don't expect polish. It's a corrugated-roof, plastic-chair operation a couple of blocks off downtown, with the smoke drifting over the tables and a fridge full of San Miguel. Anthony Bourdain came through years ago and it made no difference to the decor, which is exactly as it should be. Cash only, as of August 2026.
The sisig is the point — crispy at the edges, soft in the middle, no mayonnaise, no egg on top unless you ask, served spitting on a hot plate with rice. Around ₱200 a plate as of Aug 2026, which is silly value. Round it out with tokwa't baboy, kilayin (a Kapampangan pork-and-lung stew, better than it sounds), grilled chicken or a bit of chicharon bulaklak, and a plate of buro with grilled eggplant if you're feeling brave.
Hours are a bit fluid: it typically opens mid-morning and runs to about midnight, and some directories list certain weekdays as 24 hours. It's a ₱100-odd trike from Fields Avenue — tell the driver “Aling Lucing, Crossing” and he'll nod. There is a second branch elsewhere in town and a franchise or two, but the Valdez Street original is the one you came for.
